I have an issue. I cannot sleep in. I inevitably wake up before my alarm goes off, no matter what time it is set for. This morning it was set for 5:45, so naturally I woke up at 5:15. Go back to sleep you say? Can’t. The second I am awake the wheels start turning and my mind races until I just get out of bed.
What was I to do with an extra half hour? Turn my planned 7 mile run this morning into 10, that’s what. Getting out the door before 6am meant most of my run was in the dark, but I have learned to really love the darkness that comes with the early morning. A thin blanket of fresh snow made it that much more peaceful. However, the wind was blowing and my legs were stiff and tired, making for not the greatest run of all time. Yes, my calves are still sore from NYE Dance Party 2010. I feel a little pathetic about that.
The kinisio tape did it’s job pretty well this morning, though I did have a little bit of knee pain late in the run. In case you are wondering what the kinisio tape looks like, I took a picture last night.
Sorry about the picture of my butt. That tape basically extends up to my butt cheek. It seems weird that it would make such a difference, but it really does. Also, it’s hot pink which is awesome.
Speaking of last night, I will share with you my winter time go-to dinner. I roasted up a boatload of veggies.
Sweet potato, mushrooms, red onion, broccoli, and carrots tossed in coconut oil and sprinkled with sea salt. Then I put a bunch of them on a gigantic bed of greens with a tomato.
Trust me, that’s a huge plate. For the final touch, I topped the whole thing with
a serving half the jar of Newman’s Own Pineapple Salsa. Seriously, I could eat that stuff straight from the jar with a spoon. Not that I’ve ever done that.
Those are Wasa crackers on the side smothered in hummus. Delicious.
Tonight I will be having a roasted vegetable wrap with the leftovers and I can’t wait. I love having leftovers in the fridge so I can whip up a healthy dinner in no time flat.
