OOC Chocolate Granola

I am a granola lover. I make my own granola all the time, but for some reason, I never thought to combine my love of chocolate with my love of the clustery oat cereal. Until yesterday that is. The thought hit me while I was at work, and would not leave my mind until it was in my belly. I came home and got straight to work. The result is something I like to call Out of Control Chocolate Granola.

Yes, that is indeed a peanut butter jar, but I’ll get to that in a minute. Here is my recipe, loosely adapted from here.

OOC Chocolate Granola

Ingredients

½ cup Hershey’s Special Dark Cocoa

4 ½ cups rolled oats

1 cup sunflower seeds

1 cup shredded coconut

1 ½ cups Emerald Cocoa Roast Almonds

2 tsp ground cinnamon

1 tsp sea salt

¾ cup applesauce

1/3 cup brown rice syrup

¼ cup honey

½ tsp coconut extract

2 Tbsp coconut oil, melted

1 cup dried cranberries

Directions

Preheat oven to 310 degrees F.

Mix together all of the dry ingredients in a large bowl (cocoa through salt). Make a well in the center of the dry ingredients and add the wet ingredients. Mix very thoroughly, until all of the dry ingredients are coated. Spread mixture onto a large cookie sheet sprayed with cooking spray.

Bake 40-45 minutes, stirring every 15 minutes. Remove from oven and allow to cool on cookie sheet for at least 30 minutes. Stir in the dried cranberries and store in an airtight container.

The result is, well, out of control. I could not stop eating this last night for dessert. I probably consumed at least two full cups worth with almond milk, and I may have added some mini chocolate chips too. It was dessert after all, and there is no such thing as too much chocolate.

This morning for breakfast I decided on a parfait in a pb jar. I took an almost empty jar of PB & Co White Chocolate Wonderful and layered in the following: banana slices, plain yogurt, homemade cranberry sauce, and OOC Chocolate Granola. I know you can’t see the layers, but it was outta this world.

Speaking of Peanut Butter & Co, look what arrived on my doorstep yesterday!

I don’t discriminate. I love creamy, crunchy, flavored, you name it. It has to be of the natural variety though, I’m not down with partially hydrogenated oils in my nut butter.
